Got this recipe from my sil on sunday, so I decided to try it out today. My first try was a disaster! I added in the egg mixture before my butter mixture was properly creamed. *smap head* End up have to pour all the mixture away and redo it again. Well I think I learn my lesson well today, coz the second try was successful. Althought the cake sink abit (shifu said too much water) but the texture of the cake was damn soft and moist enough for my fussy taste. =p

Chocolate Cake
120g Butter
120 caster sugar (I only put in 90g)
1/2 tsp vanilla essence
4 tbsp fresh milk
2 eggs
90g plain flour
30g cocoa powder
1tsp baking powder
1. Preheat oven at 190deg C. Sift flour, baking powder and cocoa powder.
2. Whisk egg and 1/2 the amt of caster sugar till fluffy.
3. Cream butter and the other 1/2 amt of caster sugar until sugar melts and e color turns lighter. Slowly add in the beaten egg and sugar mixture from step 2. Continue creaming till fluffy. Then add vanilla esssence. Add in the milk and alternate with 1tbsp of flour and creamed till mixture is smooth.
4. Using a metal spoon, fold in the flour.
5. Pour into baking cups and bake at 190degC for 20mins.
I baked Apple and Carrot cupcakes for FE too.

1 cup plain flour
1/2 tsp baking powder
1tbsp veg oil
1tbsp honey (optional)
1 cup of Apple sauce (baby food)
1/2 cup of shredded carrots
1 egg
1. Preheat oven at 190degC. Mix the dry ingredients together and add all remaining ingredients and mix quickly.
2. Bake for 15mins.
