Chicken Rice
Preparation time : 15 mins
Cooking time : 1 hour
Ingredients :
1/2 cup brown rice
(remaining cooked rice can be chilled for other meals)
1 drum stick + 1 chicken inner fillet
(portion enough for 1 meal for my FE)
Carrots / Pumpkin
Green vegetables
Method
1. Add 3/4 cup of water to brown rice
2. Add in chopped carrot and pumpkin
3. Put chicken ontop of the brown rice
4. Cook / Steam until rice and chicken are cooked
5. Add in green vegetable and steam for another 15mins
6. Ready to serve
Quiche

- 2 eggs, 1 pack of Silk tofu, 120g of minced meat (chicken/pork/mutton), cheese (optional)
- Shredded carrots, chopped parsley
- Preheat oven to 180degC
- Squeeze out excess water from the tofu
- Beat up the eggs
- Mix in all the rest of ingredients in big mixing bowl
- Fill up the aluminium cups with the mixture
- Top with cheese (optional)
- Bake for 30mins at 180degC
* This version does not contain any carbohydrates. To make it a complete meal, you can add potatoes or oat and some vegetables into the mixture before baking.
Baked Fish

- 500g Frozen dory Fish, cut into cubes
- 1 cup of rice
- 1 egg
- 1 tsp of olive oil
- Herbs (rosemary n pasley)
- Some chopped greens and shredded carrot
- Preheat oven at 190degC
- Mix all the ingredient together and transfer the content into the aluminium tray
- Bake for 30mins at 190degC
Warning : After eating this … the mouth will have fishy smell. =P
Chicken Patty with Brown rice

- 500g Chicken breast meat (minced)
- Chopped chye sim
- Shredded carrot
- Brown rice
- Mix the chicken minced meat with the vegetable and form into patty
- Boil a pot of water
- When the water is boiled, add the meat patty into the boiling water.
- When the patty floats up, means its cooked. Remove them and cool off
- Add cooked brown rice together with the meat patty and serve.
*You can also pan-fry / steam the meat patty instead of boiling.
Steamed Minced pork

- Minced pork
- Shredded carrot
- Peas
- French beans
- Parsley
- Place the minced pork in a bowl that can withstand heat.
- Sprinkle some chopped parsley on the minced meat
- Steam for 10 mins
- Add the veg in and steam till cooked. (this is to prevent veg overcooked)
- When serving add in cooked brown rice
Can’t remember how long it take to be cooked, but should be around 20mins. It also depends how thick you lay the minced meat.
Pork chop

- Pork loin, sliced
- 1 clove of garlic, Chopped
- Cooked veg (i used porched french bean here)
- Cooked pasta
- Heat up 1 tsp oil into a non-stick pan
- Pan-fry the pork loin
- Add in the chopped garlic when the meat is 80% cooked
- Remember to fry both sides of the meat
- Serve with cooked veg and pasta
Meat loaf

- 500g Minced chicken / pork / mutton / beef
- Pumpkin / carrot cut into cubes
- Peas
- Celery cut into cubes
- 1 egg
- 1 cup of cooked brown rice / pasta / potato
- Herbs (rosemary/parsley)
- Preheat oven at 190degC
- Mix the minced meat with the egg, vegetables and herbs (Mixture A)
- Lay the bottom of the aluminium tray with brown rice / pasta / potato
- Fill up the tray with Mixture A
- Bake for 40 mins at 190degC (usually my meat loaf is rather thick, so need longer timing)
